Ingredients
2 -15.5 oz. cans Chickpeas, drained
½ cup finely diced Celery
¼ cup finely diced Spanish Onion
¼ cup finely diced Red Pepper
3 Tbsp. chopped Flat Leaf Parsley
¼ cup Mayonnaise
2 Tbsp. Fresh Lemon Juice
¼ tsp. celery seed
Salt and Pepper to taste
Directions
- Mash half of the chickpeas with a fork, potato masher, or in a food processor or blender.
- In a mixing bowl, place the mashed and whole chickpeas and all the remaining ingredients.
- Toss together well.
- Add salt and pepper to taste.

- TIP: Missing the salty, ocean flavor of tuna? Mix in a tablespoon of kelp flakes!
