Ingredients
- Salad Ingredients
1 ripe peach, diced
1/2 medium jicama, diced
1 can chickpeas, drained and rinsed
1 ripe avocado, diced
- Dressing Ingredients
1 Tbsp olive oil
1/2 lime, juiced
1/8 tsp garlic powder
1/8 tsp cumin powder
1/8 tsp sea salt
1/8 tsp black pepper
Directions
- In a medium bowl, combine peaches, jicama and chickpeas.
- In a small bowl, whisk together dressing ingredients.
- Pour the dressing into the medium bowl and toss completely.
- Add the avocado and fold in gently.
- Serve chilled and enjoy!
