Ingredients

  • Salad Ingredients
  • 1 cup farro, cooked

  • 1 cucumber, diced small

  • 3-4 radishes, diced small

  • 2 Tbsp fresh mint, chopped

  • Dressing Ingredients
  • 1 Tbsp Dijon Mustard

  • 1 Tbsp Honey

  • 2 Tbsp White Wine Vinegar

  • 4 Tbsp Olive Oil

  • A pinch of Salt

Directions

  • In a mixing bowl, combine the farro, the cucumbers, the radishes and the mint.
  • In a separate bowl, combine all the ingredients for the dressing and whisk until blended.
  • Pour the dressing over the cucumber and radish mixture and toss gently.

Notes

  • TIP: Top with grilled chicken, chick peas or some avocado for a complete meal!
