Ingredients

  • 1/2 medium Yellow Onion, diced

  • 3 cloves Garlic, chopped

  • 2 tbsp Olive Oil

  • 3 stalks Celery, chopped

  • 3 Carrots, peeled & sliced

  • 3 Parsnips, peeled & diced

  • 32 oz Vegetable Broth

  • 8 oz filtered Water

  • 1 – 15.5 oz can of Chick Peas, drained & rinsed

  • 1/2 tbsp Dry Rosemary

  • 1 tsp dry Thyme

  • 1 tsp dry Sage

  • 2 cups Barley, cooked

  • Salt & Pepper to taste

Directions

  • In a medium pot, sauté onions and garlic in olive oil until onions are translucent.
  • Add carrots, celery and parsnips. Cook on medium heat for 3-5 minutes.
  • Add broth, water, chick peas and herbs. Bring to boil then lower heat. Cover pot and allow to simmer for 8-10 minutes, stirring occasionally.
  • Remove from heat and stir in barley.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

  • TIP: Soup’s flavors will develop overnight and taste even better the next day!
