Ingredients
1 lb Mushrooms, cleans, trimmed, and thinly sliced
½ cup Flat Leaf Parsley, chopped
½ small Red Onion, diced
2 stalks Celery, diced
½ cup Parmesan or Pecorino Romano, shaved
¼ cup Lemon Juice, fresh squeezed
3 tbsp. Extra Virgin Olive Oil
Salt and pepper to taste
Directions
- In a mixing bowl, place mushrooms, parsley, red onion, celery, and cheese.
- In another bowl, mix the ingredients for the lemon juice and olive oil.
- Pour dressing over salad.
- Season with salt and pepper to taste.
