Crazy Crunchy Cool Cucumber Salad

- Salad Ingredients
3 Cucumbers, peel, cut in half lengthwise, remove seeds, and cut into ¼”-inch half moons
1 cup of thinly-sliced Radishes
4 Tbsp. chopped Mint
1 Tbsp. Dijon Mustard
1 Tbsp. Honey or Agave Nectar
2 Tbsp. White Wine Vinegar
4 Tbsp. Canola or Olive Oil
A pinch of Salt
- In a mixing bowl, combine the cucumbers and the radishes.
- In a separate bowl, combine all the ingredients for the dressing and whisk until blended.
- Pour the dressing over the cucumber and radish mixture and toss gently.
