We are now obsessed with Cauliflower Rice! This pilaf is a complete, filling meal with sautéed onions, green peas and chick peas with chopped parsley.

Ingredients

  • 1 head of cauliflower, grated with box grater or grated in food processor with grating blade

  • 1 Tbsp olive oil

  • 1 small onion, chopped

  • 1 cup frozen green peas

  • 1-15.5 oz can of chick peas, drained and rinsed

  • 1/4 tsp garlic powder

  • Salt and pepper to taste

  • A handful of parsley, chopped

Directions

  • In a large sauté pan, heat 1/2 Tbsp olive oil over medium heat. Add onions and sauté until translucent and slightly browned.
  • Add in green peas, chick peas, 1/8 tsp garlic powder and some salt. Sauté for 4-5 minutes.
  • Gently fold in cauliflower. Add the remainder of your olive oil and seasonings. Combine completely. Cover and allow to cook over medium-low heat for 10 – 12 mins. Stirring occasionally.
  • Remove from heat and stir in parsley.
