Ingredients

  • 1 lb Mushrooms, cleans, trimmed, and thinly sliced

  • ½ cup Flat Leaf Parsley, chopped

  • ½ small Red Onion, diced

  • 2 stalks Celery, diced

  • ½ cup Parmesan or Pecorino Romano, shaved

  • ¼ cup Lemon Juice, fresh squeezed

  • 3 tbsp. Extra Virgin Olive Oil

  • Salt and pepper to taste

Directions

  • In a mixing bowl, place mushrooms, parsley, red onion, celery, and cheese. 
  • In another bowl, mix the ingredients for the lemon juice and olive oil.
  • Pour dressing over salad.
  • Season with salt and pepper to taste.
