1/2 medium Yellow Onion, diced
3 cloves Garlic, chopped
2 tbsp Olive Oil
3 stalks Celery, chopped
3 Carrots, peeled & sliced
3 Parsnips, peeled & diced
32 oz Vegetable Broth
8 oz filtered Water
1 – 15.5 oz can of Chick Peas, drained & rinsed
1/2 tbsp Dry Rosemary
1 tsp dry Thyme
1 tsp dry Sage
2 cups Barley, cooked
Salt & Pepper to taste
Directions
- In a medium pot, sauté onions and garlic in olive oil until onions are translucent.
- Add carrots, celery and parsnips. Cook on medium heat for 3-5 minutes.
- Add broth, water, chick peas and herbs. Bring to boil then lower heat. Cover pot and allow to simmer for 8-10 minutes, stirring occasionally.
- Remove from heat and stir in barley.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- TIP: Soup’s flavors will develop overnight and taste even better the next day!
