YIELD: 5 – 6 Servings

Ingredients

  • 7 Plum Tomatoes

  • 1 clove Garlic, minced

  • ½ small Red Onion, chopped small (about ¼ cup)

  • 12 Fresh Basil Leaves, washed, dried and chopped (about 3 Tbsp.)

  • 2 tbsp. Balsamic

  • 2 tbsp. Olive Oil

  • Salt and Pepper to taste

  • French Baguette, sliced and lightly toasted or your favorite Crackers

Directions

  • Cut the tomatoes in half and spoon out the seeds.  Dice the tomatoes into ¼”-inch dice.
  • Combine all the ingredients in a mixing bowl and toss. 
  • Add salt and pepper to taste.
  • Served on baguette slices that have been lightly toasted in the oven, or on crackers.
