Tasty Tomatoes on Toast
TOOLS and EQUIPMENT:
YIELD: 5 – 6 Servings
7 Plum Tomatoes
1 clove Garlic, minced
½ small Red Onion, chopped small (about ¼ cup)
12 Fresh Basil Leaves, washed, dried and chopped (about 3 Tbsp.)
2 tbsp. Balsamic
2 tbsp. Olive Oil
Salt and Pepper to taste
French Baguette, sliced and lightly toasted or your favorite Crackers
- Cut the tomatoes in half and spoon out the seeds. Dice the tomatoes into ¼”-inch dice.
- Combine all the ingredients in a mixing bowl and toss.
- Add salt and pepper to taste.
- Served on baguette slices that have been lightly toasted in the oven, or on crackers.
