Ingredients

  • 1 cup frozen Edamame, shelled and thawed

  • 1 small Hass Avocado, peeled

  • ½ red onion, diced

  • 1 clove Garlic, minced

  • 1 Lime, juiced

  • 1 Plum Tomato, diced

  • 2 tbsp. Water

  • 2 tbsp. Cilantro, chopped

  • 1 tsp. ground Cumin

  • Salt and pepper to taste

Directions

  • Place the edamame, avocado, and water into a food processor.  Pulse until smooth.
  • Transfer mixture into a mixing bowl and add onion, garlic, lime, tomato, cilantro, and cumin.
  • Season with salt and pepper.
  • Great with chips!
