Featured Veggiecator: Sabrina Cooper

When we first invisioned the expansion of our program, we wanted to "Veggiecate the Nation." It is even the chorus of the our theme song! However, we are SO pleased that Veggiecation has grown beyond our borders and into other great nations! In honor of that, this feature we are focusing on Sabrina Cooper - a Culinary Nutrition Expert and Veggiecator, living in Toronto, Ontario, Canada. 
After years of working as a Registered Dental Hygienist, Sabrina realized that it was time to step in a different direction and follow her passion for nutrition and most of all being in the kitchen.   
Sabrina recognized the common theme is that there isn’t time to prepare meals that are healthy, or that it is unclear to many what makes up healthy meals.  These conversations would arise quite frequently while working in the dental office so she decided that she needed to provide services for adults and children to showcase that preparing healthy meals does not have to be complicated.  Being able to educate the community on how they can get the most from the foods that they eat has become her true passion.  For years, she struggled with food issues and with much dedication and finding the right fit for her, she felt better than ever, all through healthier food choices.  
Sabrina says that taking the Veggiecation Training has given her the skills and confidence to educate children in a fun and interactive way.  Getting to the basics and letting them do the preparing and cooking while learning nutritional education is definitely rewarding and a win win on both sides.  Her journey has just begun and she is looking forward to creating more healthy lunch programs, workshops for children not only close to home but also abroad.

What has been the best thing about your Veggiecation training?
The best part of my Veggiecation training has been all the information that comes with it.  I love the colourful posters that I use and keeps me on track to what I want to teach my audience.  I also love the hints and tips on how to engage the audience and get them involved in every process.
What's your favorite anecdote about an especially cute or picky child?
I was a super picky child so I put myself in their shoes.  When I tell my story on how I never wanted to try new things until one day I got the courage to try and  I realized how many things I missed out on because I didn’t even give it a chance, they often warm up to the idea of trying something new.  It is great when they say they don’t like a certain vegetable but when we make into something else they end up liking it.   
What are your favorite recipes to use?
So far the hummus dips have been a hit because I let them try cooked chickpeas alone and often I get thumbs down  but making it into a dip I always get two thumbs up.  Adding in a special ingredient like spinach, beets, or red peppers always gets a great reaction.  
What has inspired you in this journey?
This was a response I received from the Vice Principal of one of the schools I did a workshop for “Your passion is shining through these pics and that is why I see such engaged students” Which makes me smile knowing that I have made the right choice and I am doing what I am meant to do.
