TOOLS and EQUIPMENT:
YIELD: 5 - 6 Servings
7 Plum Tomatoes
1 clove Garlic, minced
½ small Red Onion, chopped small (about ¼ cup)
12 Fresh Basil Leaves, washed, dried and chopped (about 3 Tbsp.)
2 tbsp. Balsamic
2 tbsp. Olive Oil
Salt and Pepper to taste
French Baguette, sliced and lightly toasted or your favorite Crackers
Cut the tomatoes in half and spoon out the seeds. Dice the tomatoes into ¼”-inch dice.
Combine all the ingredients in a mixing bowl and toss.
Add salt and pepper to taste.
Served on baguette slices that have been lightly toasted in the oven, or on crackers.
