Shroomy Salad

TOOLS and EQUIPMENT:

Cutting Board

Knife

Mixing Bowls

Whisk

Vegetable Peeler     

YIELD: 5 servings

INGREDIENTS

1 lb Mushrooms, cleans, trimmed, and thinly sliced

½ cup Flat Leaf Parsley, chopped

½ small Red Onion, diced

2 stalks Celery, diced

½ cup Parmesan or Pecorino Romano, shaved

¼ cup Lemon Juice, fresh squeezed

3 tbsp. Extra Virgin Olive Oil

Salt and pepper to taste

 DIRECTIONS

In a mixing bowl, place mushrooms, parsley, red onion, celery, and cheese. 

In another bowl, mix the ingredients for the lemon juice and olive oil.

Pour dressing over salad.

Season with salt and pepper to taste.
